Garlic Sausage
Ingredients:
150 g/6 oz boneless beef
15 g/ 1/2 oz rice
10 g/ 2/5 butter
1/2 tsp garlic
Clean meat from fat and sinews and pass it together with garlic three-four times through a meat grinder together with a fine plate. Mix ground meat with cooked rice and transfer the mixture to a damp cheesecloth, wrap cheesecloth to form a sausage, tie the ends, and steam until cooked. Take finished sausage out of the cheesecloth, cut into 2-3 pieces, and drizzle with melted butter.

Steamed Meatballs with Garlic
Ingredients:
100 g/4 oz meat
15 g/ 1/2 oz rice
2 tsp butter
1/2 tsp garlic
Remove all the fat and sinews from meat, then pass meat through a meat grinder two-three times, then mix it with cooked rice and finely chopped garlic, shape mixture into 3-4 meatballs and steam until done. Serve with a piece of butter.

Blueberry Soup with Rice
Ingredients:
40 g/ 1 1/2 oz dried blueberries
30 g/ 1 oz rice
15 g/ 1/2 oz sugar
1/10 lemon
50 g/ 2 oz white bread
750 g/ 26 fl oz water
Wash blueberries, add to a pan with 350 g (12 fl oz) of water, bring to boil and simmer 10-15 minutes, then take off the heat and let it infuse 30 minutes longer. Strain blueberries and add sugar and lemon juice to the strained liquid, let it cool. Cook rice in the remaining water, then pass rice with its cooking liquid through a sieve and add blueberry infusion to it. Serve with thin white bread toasts. This soup should be served at room temperature.

Rice Soup with Meat
Ingredients:
50 g/2 oz rice
5 g/ 1/5 oz butter
150 g/6 oz meat bouillon
500 g/18 fl oz water
Add washed rice to boiling water and cook for 1 hour, then strain and add to hot bouillon. Just before serving add butter to the soup. This soup can be served with white bread toasts.

Meat Bouillon with Toasts
Ingredients:
100 g/4 oz marrow bones
50 g/2 oz meat (for clarification process)
10 g/ 2/5 oz vegetables
1/5 egg white
600 g/2 1/2 cups water
Chop bones into smaller pieces, cover with cold water in a pot, quickly bring to boil, lower the heat and simmer 4-5 hours. Pass meat through a meat grinder, mix with an egg white and 50 g (2 oz) cold water, add to the stock and simmer 1 hour. Thinly slice vegetables and brown them in a skillet without any fat. Add vegetables to the stock 40 minutes before the end of cooking. Strain cooked bouillon through a clean kitchen towel, degrease, and serve with toasts from white bread.

Carrot Juice with Cream
Ingredients:
150 g / 5.3 oz carrots
50 g / 1.8 oz cream
25 g / 0.9 oz water
Peel and grate carrots, add cold boiled water, mix, squeeze through cheese cloth and add cream. Serve cooled, but not cold.

Snowballs with Fruit Sauce (Floating Islands)
Ingredients:
1/2 egg white
25 g / 0.9 oz sugar
50 g / 1.8 oz strawberry
5 g / 0.2 oz potato flour
100 g / 3.5 oz water
vanilla as desired
Whip egg white and gradually add 15 g / 0.5 oz sugar and vanilla, while continuing whipping. With a tablespoon, put whipped egg whites into a deep pan with simmering water. Flip snowballs after 2-3 minutes, cover lid. Leave for 5 minutes, then remove, drain and put on a plate. Pour over with strawberry kissel, made from strawberries, flour and 10 g / 0.4 oz sugar.

Steamed Farmers Cheese Souffle with Cookies
Ingredients:
120 g / 4.2 oz farmers cheese
20 g / 0.7 oz cookies
15 g / 0.5 oz sugar
1/2 egg
20 g / 0.7 oz milk
10 g / 0.4 oz butter
30 g / 1 oz sour cream
Crush cookies, mix with sugar, pour over with milk, leave like that for 10-15 minutes, then mix with farmers cheese, egg yolk and 5 g / 0.2 oz melted butter. Add whipped egg white, put into greased mold and steam until ready.

Farmers Cheese Cream
Ingredients:
100 g / 3.5 oz farmers cheese
10 g / 0.4 oz butter
1/2 egg yolk
35 g / 1.2 oz sour cream
15 g / 0.5 oz sugar
20 g / 0.7 oz milk
vanilla as desired
Whip egg yolk with 10 g / 0.4 oz of sugar, add milk and bring to boil, frequently stirring while cooking, but not allowing to boil. Then cool, mix with farmers cheese, butter and vanilla and 20 g / 0.7 oz sour cream. Mix it well and shape it nicely. Mix remaining sour cream with powdered sugar ( 5 g / 0.2 oz), whip and cover farmers cheese cream with it.

Steamed Egg Omelet
Ingredients:
2 eggs
60 g / 2.1 oz milk
10 g / 0.4 oz butter
Mix eggs with milk, pour into a greased mold, steam until ready. Serve with a piece of butter.
