Coffee and Condensed Milk Ice Cream

Standard

Ingredients:

1 can condensed milk with coffee
2 cups water

Transfer condensed milk with coffee out of the can into a pot, dissolve it with hot water, mix, and bring to boil. Cool the mixture and transfer it into an ice-cream maker. To freeze — follow instructions from “Vanilla Ice Cream” recipe.

Cacao and condensed milk recipe can be made following the same instructions.

Vanilla Ice Cream

Ingredients:

3 cups heavy cream or milk
1 1/4 cups sugar
3 eggs, separated
1 tsp vanilla extract

In a pot beat egg yolks with sugar and vanilla until light in color, gradually add hot cream or milk, mixing all the time. Put the pot on low heat and cook while stirring with wooden spoon until the mixture thickens and coats the back of the spoon. Do not let it boil. Take the pot off the heat, strain the custard and cool it down. Pour cooled custard into a container of ice cream maker, surround it with crushed ice mixed with salt ( 1 kg/2 lb 4 oz of salt for each 6-7 kg/13-15 lb of ice) and churn the ice cream.

Add more ice during churning and drain water. Churning takes 30-40 minutes. When ice cream becomes thick, open the cover and remove mixing paddle, smooth the ice cream and let it harden for an hour. Put into dessert bowls to serve.

Ice cream can also be made at home. It is necessary to have a special vessel with a lid and a pail to fill with a mixture of chopped ice and salt.
Two main types of ice cream can be prepared: vanilla and fruit-berry. Vanilla ice cream is made from milk or cream, sugar and eggs, as well as aromatic and flavoring substances. Fruit-berry ice cream is made from juice and puree of different fruit, berries and sugar. The amount of sugar added needs to be carefully monitored, since too much sugar affects the quality of ice cream as does too little.
When serving ice cream, you may decorate it with various canned fruit, cookies, and pour it over with jam, berry syrup, fruit juice, liqueurs and wines.
